Eating on the Cheap, Version 2.0

Yesterday I shared our favorite recipe for Dilled Egg Salad, a really tasty and inexpensive recipe. Today I thought I would share another favorite way to stretch a menu on the cheap.

Potatoes are inexpensive, and despite being maligned for years from those in the low-carb camp, are quite healthful. Next time you make baked potatoes and have a few leftover (or just make a few extra to have on hand), try out this easy, delicious and good-for-breakfast-lunch-or-dinner side dish.

Hashed Potatoes

1 tablespoon vegetable oil
1/2 medium onion, sliced

Hardly a day goes by without some store, organization or individual spouting these words to precede some statement of fact. Some local food stores are trying to promote their prices and methods for getting a meal on the table on the cheap. Meanwhile cooking shows also seems to be utilizing our common interest in inexpensive meal preparation.

Photo finish

There’s a Junie B. Jones book that begins with Picture Day at Junie B.’s school. She’s horrified that the photographer snaps her picture just as she’s squeezing one eye shut and making a horrible face. The picture is so bad, that poor Junie B. hides it under her bed to scare the monsters away.

Slow Cooker "Hamburger" Soup

My mom is my biggest source of new recipe ideas. Usually she sends me a PDF of a recipe she scanned with a note, “a blogging idea?” But I took special notice when she sent me this recipe of hers she wrote on it, “****” and started her email with the words, “This is a keeper” I couldn’t agree more.

Stuffed Acorn Squash

Sometimes I choose recipes with the boys' food "likes" in mind, sometimes it is for a particular occasion, and sometimes, just sometimes, I just choose recipes that *I* think I would like. (Side note: SPH is one of the least picky eaters I know, so he is one person I know will eat almost anything I serve)

I saw a recipe for Moroccan-Style Stuffed Acorn Squash recently in Martha Stewart Living. I had just picked up some local Acorn Squash, so this recipe was calling my name. I loved the idea of using Moroccan flavors in a squash, and this recipe also used Bulgur, which I love.

English Muffin French Toast Dippers

It's become a bit of a tradition that we usually have a big breakfast on Saturday mornings. Either SPH or I get up with the boys and we make something like eggs and bacon, homemade waffles or pancakes.

The other morning the boys requested French Toast and no bread was to be found in the house. I substituted Cinnamon Raisin English Muffins and called them English Muffin French Toast Dippers, which I guess made them sound even more fun and exciting, because the boys loved it.

Naturally Orange

Our kids get enough artificial candy gunk this time of the year, don’t they? Why not try a way create orange colored frosting for your little pumpkins?

I developed this naturally orange colored frosting for some pumpkin cookies the boys and I made last Halloween. They were so cute, so tasty and so naturally cute that I just had to share.

First, make your cut-out pumpkin cookies. We like to use gingerbread dough for cut-outs, but whatever floats your boat is just fine.

In the land of the living...

Every year for the past few years we've hosted a family Halloween gathering at our house. My kids love to decorate for Halloween, and I love the chance to host a holiday party--especially a party that involves cooking up ghoulish looking cookies and other Halloween-themed food. I was so prepared this year--in advance, for once. Weeks ago I bought the party plates and tablecloth, and I've been collecting recipes and party ideas, and browsing Halloween sites for what seems like forever.

Eggs in a Nest

The holiday season is almost upon us and with it comes holiday visitors. Need a yummy, warm and filling way to feed your visitors breakfast? Try a new Sweet Pea favorite, Eggs in a Nest.

Eggs in a Nest

2 medium russet potatoes, shredded
½ teaspoon salt
½ teaspoon ground pepper
¼ teaspoon paprika
1 tablespoon olive oil
1 pound of turkey breakfast sausage
1 medium onion, diced
8 eggs
16 ounce container reduced fat cottage cheese
12 ounces shredded cheddar cheese

Preheat oven to 375 degrees.
