Braised Red Cabbage

My father-in-law's family is from Germany, so perhaps that accounts for my not being surprised when Sweet Pea Husband (SPH) said to me the other day, "you know what I would love to have sometime soon? Braised Red Cabbage." Since we still have one last red cabbage from our last CSA delivery, I'll be whipping this up for our dinner tonight.

What's up with all the salads?

I realized as I was prepping today's post that unintentionally I ended up doing all of my posts about salad recipes this week. Perhaps it is the waning summer days and the realization that all-too-soon we'll be cooking more soups and stews and less salads.

Next time you cook rice for a stir-fry or other dish, make extra and freeze it. Then you will have rice on hand for recipes, like this one below.

Beyond the rice, dressing and black beans, this recipes changes a little bit each time I make it. I have added corn, cucumber or omitted the celery.

Fresh Vietnamese Chopped Salad

I love recipes like this one. It is fresh and tasty, healthful, but best of all, is easily adaptable to whatever vegetables you have on hand in your kitchen.

This recipe uses an authentic Vietnamese ingredient, fish sauce. It is pungent, but beautifully flavorful when used in small amounts. It tranforms any recipe into an instant authentic Asian recipe when used.

For an easy dinner, take this chopped salad and top it with a grilled protein or tofu. Yum.

Fresh Vietnamese Chopped Salad

5 cups chopped vegetables

3 cups fresh corn kernels

Otherworld

Sometimes I feel like I'm a big grouch when it comes to talking/writing about L.'s school (or the state of public schools in general)--just follow the "School Daze" tag above and you'll find a whole slew of such posts. I might complain about this or that, whether it's testing, or mishandling of curriculum opportunities, or how No Child Left Behind should really be called No Child Gets Ahead. But yesterday afternoon I overheard a snippet of a conversation outside of T.'s preschool that made my blood boil a little.

Earth Day Redo

Yesterday afternoon I was chatting with a colleague and commiserating with her over how little we've been getting done these days. The work has been piling up, yet our energy and motivation seems to be grinding slowly to a halt--winding down, notch by notch. I'll sit at the computer and try and work, then look up and see the sunlight filtering in through the tall holly trees and oaks in the backyard.

Coming clean

Sunday was a grumpy day for all of us. It poured icy rain all day long. The kids alternately moped around, pestered us (play with me! play with me!-Or-I'm bored! I'm bored!), or fought and bickered about every minute thing possible (She breathed on me! He touched my arm!). We had family visiting for the weekend, and when they sped off on Sunday morning, in a whirlwind, we were left to pick up the pieces of two kids grappling with a healthy case of post-visit, post-spoiling, cabin-fever-induced, flat-out grouchiness.

Resolutions aren't just for the New Year...and tell me about your crock pot!

This summer I made two new resolutions. Resolution #1 is to give up drinking coffee, and Resolution #2 is to embark on meal planning for the week, rather than rely on our fly-by-the-seat-of-our-pants approach. I only managed to come around to actually doing Resolution #1 about two weeks ago. I've given up coffee before, of course, in the months leading up to our trying to conceive both kids. This time around, I'm making the switch because I ended up drinking way too much caffeine last semester and, as a result, I think it made me jittery and less patient than I usually am.
